You, your family, and your friends have been living “under wraps” these past few weeks, in isolation, away from one another. We know it isn’t easy and is scary; everyone’s sense of normal has been interrupted and lives have been changed in major ways. We’re all in this together, if even from a distance.
In spite of these changes, mealtime and snacks continue to provide us with a sense of comfort. We may eat out of boredom, excitement or pure necessity and hunger.
SUUP is here to offer our food as a measure of comfort. It’s nutritious, wholesome and tasty. The items on our menu may be familiar to you or may simply entice you because they’re different than what you’re used to eating. You want to enjoy your food while at the same time maybe try something new.
Wraps are always fun to make and eat. They have visual appeal, as well as offer wonderful flavour experiences. Vegan wraps aren’t difficult to prepare, and here we offer a couple ideas to get you started so that you and your family can try something new and tasty while staying home.
You might think that a wrap has to be made using a bread product. Not true. Have you considered using lettuce leaves? Yup -- they’re perfect for vegan wraps. Try this tasty recipe.
Roasted Cauliflower Lettuce Wraps
1 head medium-sized cauliflower
1 Tbsp olive oil
Sprinkling of garlic salt
Olive oil spray
1 cup SUUP’s Harissa Roasted Red Pepper Spread
Romaine lettuce leaves, as many as you like
SUUP’s Lemon Lovers’ Hummus, as much as you like
Grape tomatoes, sliced
Sesame seeds (optional)
Preheat oven to 400°F. While it’s heating up, cut cauliflower into florets, then put them in a large bowl along with SUUP’s Harissa Roasted Red Pepper Spread, olive oil, and garlic salt. Toss together until coated. Place them on a foil-lined baking sheet sprayed with olive oil. Roast for 30 minutes.
While waiting, prep your wrap. Take a Romaine lettuce leaf, add a bit of SUUP’s Lemon Lovers’ Hummus to the bottom.
Once the cauliflower is done, add florets to your lettuce wrap and top with tomato, avocado, and sesame seeds.
